HEALTHY BEETROOT DIP

INGREDIENTS

5 red beetroot (1kg)

325g Procal Authentic Greek Yoghurt

2 garlic cloves, crushed

60ml lemon juice

2 tbsp extra virgin olive oil

1/2 tsp ground cumin

1/2 tsp ground coriander

1/2 tsp ground cinnamon

1/2 tsp paprika

pepper to taste

METHOD

  1. Cut off the beetroot stems, about 1cm from the root. Scrub the roots gently.
  2. Peel the beetroots
  3. Cook the beetroot in a large pot of simmering salted water for 60 minutes or until tender. Drain, then allow to cool slightly.
  4. Chop, grate or process the beetroot in a food processor then transfer into serving bowl.
  5. Add the rest of the ingredients and mix well. Season to taste with pepper.
  6. Cover and refrigerate until required.
  7. Serve with crackers, crusty bread or chopped carrot.
