Preheat your oven to 180 degrees (160 fan-forced) and line 2x 6-cup muffin tin with paper liners.
In a large bowl whisk together the eggs, sugar, vanilla extract and skim milk
In a separate bowl, sift the flour, cocoa powder, baking powder and salt
Add the dry ingredients into the wet ingredients and fold together
Add the Greek yogurt, vegetable oil, and chocolate chips into the mixture, and gently stir everything together with a wooden spoon or a spatula until combined.
Portion the batter into the 12 muffin cups evenly and bake at 180 degrees or 160 fan-forced for 22-25 minutes, or until the muffins are cooked through (test with a toothpick!).
Let the muffins cool for several minutes and enjoy warm.
