CHOCOLATE PORTOKALOPITA (CHOC-ORANGE CAKE)

INGREDIENTS

Cake:

  • 400g fillo pastry
  • 500g dark chocolate
  • Zest of 1 orange
  • 250g sunflower oil
  • 250g castor sugar
  • 200g Procal Authentic Greek Yoghurt
  • 200ml cream
  • 50g cocoa powder
  • 5 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 300ml buttermilk

Syrup:

  • 625g sugar
  • 500ml water

METHOD

  1. Dry fillo overnight and then crumble with your hands. Add the baking powder and baking soda.
  2. Warm up the cream and the chocolate and melt.
  3. In another bowl, whisk the eggs, then add the oil, sugar, zest of one orange, yoghurt and buttermilk.
  4. Sift the cocoa powder into the wet mixture.
  5. Add the fillo pastry into the egg mixture in batches. Lastly add the chocolate and cream.
  6. Bake in the oven for 45-60 min at 160 degrees fan forced. Test with a skewer at the 45 minute mark and if still wet, bake for a further 15 mins.
  7. To make the syrup, heat 625g sugar with 500ml water over low flame. Once cool, pour the syrup over the cake whilst it is still warm.
