BOCCONCINI SALAD

DIFFICULTY


INGREDIENTS

2 tbsp extra virgin olive oil

1 1/2 tbsp balsamic vinegar

1 garlic clove, crushed

1 tsp caster sugar

250g tomato roma mini

220g Procal Bocconcini, drained, cut in half

1 cup fresh basil leaves, large leaves torn

Sprinkle with mixed herbs

Salt and pepper to taste

METHOD

  1. In a small bowl mix the oil, vinegar, garlic, sugar and salt and pepper until well combined.
  2. Arrange the tomato and bocconcini in a shallow serving dish. Top with the basil. Drizzle over the dressing and sprinkle with mixed herbs to serve.
