ROASTED CARROTS WITH GREEK YOGHURT

DIFFICULTY


INGREDIENTS

  • Baby carrots
  • 1 tbsp green herbs
  • 1 cup Procal Authentic Greek Yoghurt
  • 1 tbsp flaked almonds
  • 1 tbsp pumpkin seeds

 

METHOD

  1. Bake baby carrots in the oven for 30 minutes until just tender.
  2. In the meantime, blitz up some of your favourite green herbs in a processor and blend with the Greek yoghurt.
  3. Top carrots with yoghurt, flaked almonds and some toasted pumpkin or pepita seeds for some added crunch.
  4. If I feel in the mood for a bit of added sweetness, I like to add a drizzle of maple syrup on the carrots before baking them.
