MUSHROOM AND HALLOUMI BURGER WITH SMOKY BBQ YOGHURT SAUCE

INGREDIENTS

Ingredients for sauce:

  • 1 cup Procal Greek Yoghurt
  • 2 tsp smoked paprika
  • 1 tsp oregano, dried
  • ½ tsp salt
  • ½ black pepper, cracked
  • ¼ tsp cayenne pepper
  • 1 tsp cumin
  • Zest of one lemon

Ingredients for burgers:

  • 4 brioche buns, sliced in half
  • 2 tbs extra virgin olive oil
  • 4 large field mushrooms, stalks removed
  • 8 slices halloumi
  • Rocket

METHOD

  1. Place all ingredients for the smoky BBQ sauce into a bowl and combine very well. Set aside.
  2. Heat a large frypan on medium heat.
  3. Add olive oil and mushrooms.
  4. Sauté for 5 minutes each side until browned and tender.
  5. When the mushrooms are almost cooked, add halloumi slices to the pan and cook for 3-4 minutes each side until golden. You can fry them longer if you like them extra crispy.
  6. Remove mushrooms and halloumi from pan onto a plate and return pan to heat.
  7. Place buns in pan to gently toast for 1-2 minutes each side then remove from heat.
  8. Assemble your burgers with a large handful of rocket, then mushrooms, then halloumi.
  9. Spread over a large dollop of smoky BBQ yoghurt sauce on the top of bun.
  10. Stack on top of your burger and enjoy.
